I too have celiac; I've been gluten free for good for four years, and due to the fact that I get DH, no one has felt the need to make me go on gluten to replicate the results of testing the better portion of 20 years ago.
This woman thought that I should have biopsy testing to make certain I still have celiac. Not how this works.
(She was also startled when my housemate, who'd gone with me, went, "Wait, if you have eaten gluten or soy today, don't touch her."
Me: "She is touching me through a sheet."
Her: "What does this have to do with anything?"
Housemate: "She will get sick from that, she will break out from that, don't touch her.")
