So now I have 15lbs of potatoes, for ONE person :D
I shall be distributing potatoes to people I think :D I have other single friends and will be asking around if anyone wants a few potatoes. And I am going to be looking for a recipe that uses potatoes for this weeks meals, LOL
But hey - cheap spuds! Can't miss out on that!

Date: 2026-04-25 10:51 pm (UTC)* Similar toppings work with hasselback potatoes, but onion or bell pepper slices in the cuts also work well.
* Mashed potatoes as a side one day, the leftovers used as a top layer for cottage pie or shepherd's pie the next.
* Our favorite mashed potato makeover is bacon potato soup. Chop bacon, cook until it softens, add diced onion, cook until that softens. Add the mashed potatoes and enough half-and-half to make it soupy. Throw in a handful of shredded cheese, wait for that to melt in. Done.
* Diced cooked potatoes with chopped corned beef make excellent hash.
The key to using up a lot of something without culinary exhaustion is to vary the use in terms of texture, flavor, etc.
