Date: 2020-08-08 06:37 pm (UTC)I didn't have a good night's sleep so I crawled out of bed too late to beat the grocery crowd and couldn't talk myself into loading the car and dragging myself to the Goodwil so I decided to work on the second chapter of the fic I've been writing and the computer or internet or something ate it. I think staying in was a good choice. I think the universe is trying to tell me something so I settled for watching a couple of movies while working on the living room and doing some ordering. I'm not really sure where the day went.

You mix 70g gram flour with 1/2 tsp ground cumin, 1/4 tsp salt, 125g coconut yogurt, 35g lemon juice, and enough water to make a thick batter, then stir in 30g chopped fresh coriander and some form of chilli if you like (I use my home-made chilli-garlic sauce which is the uncooked one from http://www.vietworldkitchen.com/blog/2007/10/homemade-chili-.html), then leave the batter to rest overnight.
Then the next day lightly toast 4 slices of bread (I use wholemeal and include crusts) and leave to cool (this stops the toast being too soggy), then immerse them in the batter to get a light coating, then fry them in a large frying pan two at a time in about 1–2 tsp of oil for about 4 minutes on each side, then sprinkle on both sides with a good sprinkling of chaat masala (can’t find my recipe for this, sorry, but there are lots on the web), cut into triangles, and serve with ketchup.
It’s based on https://www.theguardian.com/food/2019/may/04/meera-sodha-pondicherry-toast-recipe-indian-vegan-french-toast but tweaked to actually work.
The key to deliciousness is really in the technique rather than the actual recipe:
- Leaving the batter to rest overnight is important so the gram flour can properly absorb the water.
- The thickness of the batter is also important to get right — you want it not so thick that it’ll be hard to coat the bread with it, but not so thin that it’ll all run off when you put the bread in the pan.
- You’ll need to sort of spoon the batter onto most of the bread rather than just dipping it (this will be clearer when you try it). You can put more on top once it’s in the pan, but make sure you save enough from the first two to coat the second two.
- You can just flip the slices once the first side is cooked, but since that side will have soaked up all the oil, the second side will end up a bit dry. I like to slide them out of the pan, add more oil, then flip them as I put them back in.
- Make sure to prod them gently before trying to get them out of the pan, to release the cooked batter from the pan rather than from the bread.
Edited to add: And for people in the UK, do not use Waitrose gram flour for this or your toast will end up soggy and gritty. Buy gram flour from an Indian shop.

Went back to bed, had odd dream but no headache when i woke up! Just a bleh feeling from oversleeping. Now to do try to wake up & mop before J gets up. (No clue what time he went to bed)
