Date: 2013-07-24 12:14 pm (UTC)We've got five bushes (of which one is tiny and small and doesn't crop much; it's still settling in). I pull ripe clusters off still attached to their stems until I've got about a full colander (colander because it means at least some of the caterpillars and spiders find their way back out of the harvest at this stage in the process...). Then I go find somewhere sunny to sit, and I work through the colander, removing individual berries from the stems, dropping the berries onto trays (single-layer) and the stems into the compost; and _then_ the trays go into the freezer, to be bagged up once frozen & pulled out as needed. (My grandmother, Grossmutti, separated berries from stems by combing a fork along them, but I get distressed about the extent to which this causes tearing/juice-leakage and makes freezing messier, so I tend to do it all by hand.)
If there isn't space in the freezer for all the trays, a bowl gets set aside to be turned into cake (basic white sponge; spread batter in a deep roasting tin; scatter redcurrants liberally over the top; bake; sprinkle with vanilla sugar on serving -- Ribiselkuchen, food of my ancestors, etc).
This process is repeated Several Times -- typically about twice per bush (excepting the tiny bush as above).
